Asian Noodle Salad

I adapted this recipe from Pioneer Woman's Asian Noodle Salad



SALAD INGREDIENTS
  • 1 package Linguine Noodles, cooked, cooled and cut into 2 inch pieces.
  • 1 medium head Napa Cabbage, chopped
  • ½ bag Baby Spinach
  • 1 whole Red Bell Pepper, diced
  • 1 bag Bean Sprouts
  • 1/2 cup Chopped Cilantro
  • 3 whole Green Onions Sliced
  • 1 English Cucumber,diced
  • 1/2 cup sliced almonds, roasted ever so slightly in a pan on the stove

  • DRESSING:
  • 1 whole Lime, juiced
  • 1 medium orange, zested and juiced
  • 2 teaspoons orange zest plus the juice of the orange
  • 8 Tablespoons Olive Oil
  • 8 Tablespoons Soy Sauce
  • 2 1/2 Tablespoons Sesame Oil
  • ⅓ cup Brown Sugar
  • 3 Tablespoons fresh ginger, grated
  • 2 cloves Garlic, grated
Prepare
Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix and serve
